This is so simple to make, and very yummy (especially eaten whilst warm because it is crunchy on top and soft and gooey on the inside!)  You can download a printable version here.

1 Cup SR Flour

1/2 Cup Brown Sugar

1/2 Cup Dark Brown Sugar

1 Cup Coconut

1 Packet Choc-Chips

1 Cup Milk

Preheat oven to 160 Fan Forced, or 180 Conventional.

Line loaf tin with baking paper (If the paper won’t stay still, try using pegs to keep it in place!)

Mix all dry ingredients together.

Stir through milk.

Pour into prepared loaf tin.

Cook for 50-60mins, depending on oven.

I’ve included this recipe in the “Weekend Cookbook” over at Mummy’s Undeserved Blessings. If you’re wanting some ideas for what to cook, pop over and checkout some other recipes!

This is my adaption of the “Five-cup Loaf”, contributed by Jay Treacey, in “The $21 Challenge” Cookbook by Fiona Lippey and Jackie Gower of Simple Savings.
